“We use every part of the buffalo !” This old proverb, Buresi’s family makes it a way of life for four generations. Today, Hervé who manages the familial charcuterie of Cozzano, but before him his father and his grand-father have opened the road and worked for their charcuterie’s fame.
“Here, we do not wonder, we learn how to live with pigs and to cut into them from very young.” Underlines naturally Hervé Buresi. For some years, his nephew Christophe who helped him and stayed with him in every step of making charcuterie. They feed their pigs, they drive them in summer or they transform them in: prisuttu, coppa, lonzu, figatellu, panzetta, the two men work always together behind the supervision of Hervé’s wife who is in charge of the selling and promotion of their products.
“We have tourists passing, obviously, but most of the time, it is regular customers from here or elsewhere who can buy or order on the internet. Today, the online sale is a true advantage and people who know our products, order from distance with confidence” explains the young lady. It is the proof that we can perpetuate an old know-how without turning the back to modernism.
