The maintenance of the chestnut field, the gathers, the drying, the mill that he built alone, he has no time to get bored. He is really happy to discover his flour. We understand that he has not chosen her way by chance or by despite.
“I love my job and my life in the village. It takes time but I feel a real joy when I see, every year, the first flour of my granite millstone. You know, I went to gather them in the bed of the river, near an abandoned mill”. This explains the motivation of this passionate man who does not want to give up this chestnut field and he wants to keep this excellent fame of the chestnut flour of Sampolo, of the flavor very soft and particular.
